Mediterranean Quinoa Salad

Makes 6 servings | Gluten-free and dairy-free

Step 1

3 c baby spinach 
3 c cooked quinoa 
24 ounces cooked chicken breast, cubed 
1 red bell pepper, diced 
½ medium red onion, diced 
1 large cucumber, diced
3/4 c Kalamata olives, sliced

Step 2

4 Tbsp Olive oil
4 Tbsp Balsamic Vinegar

Step 3

Optional: sprinkle of feta cheese (just before serving) 

Directions

  1. Mix all ingredients from step 1 in a large bowl.
  2. Make the dressing by combining the ingredients in step 2.
  3. Add the dressing to the bowl and mix to combine.
  4. Lasts for a few days in the refrigerator.
