Makes 2 snack servings | Gluten-free and dairy-free
4 hard-boiled eggs
2 Tbsp avocado oil mayo
1 Tbsp stone-ground or Dijon mustard
1 stalk celery, finely chopped
1 Tbsp finely chopped shallot OR red onion OR chives
1 Tbsp roughly chopped tarragon OR 1 tsp dried tarragon
Salt and pepper to taste
Combine all ingredients, mix well. Adjust salt and pepper to taste. Enjoy!
