Turkey Quinoa Stew Recipe

  1. Brown quinoa in a dry kettle until toasty.
  2. Add olive oil, turkey, vegetables and herbs (from step 2) and cook until soft.
  3. Add broth, salt and bay leaf (step 3) and bring to boil. Reduce heat and simmer for 20-25 minutes until quinoa is cooked.
  4. Add beans and Bragg’s and simmer for an additional 5 minutes. Finish with a dash of lime juice.

Turkey Quinoa Stew

Makes 6 servings | Gluten free and dairy free

Step 1

1 c. quinoa, rinsed and drained

Step 2

2 Tbsp olive oil
2 lbs. ground turkey
1½ c. leeks, diced
½ c. carrot, diced
½ c. zucchini, diced
½ c. celery, diced
½ c. green pepper, diced
½ c. red pepper, diced
½ c. fresh tomato, diced
½ c. cilantro, minced
1 Tbsp dried oregano leaves
1 Tbsp dried basil leaves
2 Tbsp chili powder

Step 3

7 c. water (or preservative free broth)
1 Tbsp all natural seasoned vegetable salt
1 bay leaf

Step 4

½ c. fresh green beans
1 Tbsp Bragg® Liquid Aminos
Dash of lime juice
