Hamburger Soup Recipe

  1. Cook ground beef in butter, salt lightly and pepper, drain.
  2. Add remaining ingredients cook at least 45 minutes until vegetables are tender. 
  3. Remove bay leaf and serve with gluten-free crackers topped with butter, or brown rice tortilla sautéed in butter and broken up.

Makes 6 servings | Gluten free and dairy free

Step 1

3 T. Butter
2 lbs. Ground beef
1 Medium onion, chopped
2 tsp. Salt

Step 2

1 qt. Chicken broth
20 oz can Tomatoes, diced
4 Carrots, chopped
4 Celery tops, chopped
4 Zucchini, diced
4 tsp. Thyme or ¼ tsp. basil
10 Peppercorns
2 tsp. Salt
1 Bay leaf
