Zucchini Medley Recipe

Makes 1 serving | Gluten-free and dairy-free

Step 1

2 tsp. olive oil
½ c. onion, diced
1 clove garlic

Step 2

1 c. zucchini, sliced
½ c. green pepper, sliced
1 c. summer yellow squash, sliced
1 tomato, wedged
½ c. green beans, trimmed
¼ tsp. pepper
2 T. balsamic vinegar
1 tsp. Dijon mustard

Directions

  1. Heat skillet and sauté ingredients in step 1 for 5 minutes.
  2. Add ingredients from step 2 and cook until tender.
